ANY way to determine gear ratio ? by looking at gears ?

I have a set of used rear end gears.
I see no numbers that look like 3.23, 3.73, etc...

The big gear has 41 teeth, the Pinion gear has 12 theeth.

There are some numbers on the big gear:

12.41 26013008XXX

The pinion gear has the following on the 'head'

21013009-12-41-GM

Note some numbers could be false as they are very hard to read.

Our (4th gen Fbody) rear end's are 7.5" 10 bolts right ?

The numbers 12.41 26013008XXX and 21013009-12-41-GM tell it all. The 12 is the number of pinion teeth and the 41 is the number of ring teeth, (which you already know). Just divide the 12 into the 41 which gets you 3.42:1 ratio.
