RPM Tables ?

info about application... 94 camaro, LT1, lotsa goodies I shift at 7000 rpm's and cross the line at 7400 rpm's
In Tuning the stock pcm in speed density mode all the rpm tables stop at 7000 rpm, does the computer just default to the 7K rpm table above that 7000 rpm or is there something else that I cannot read/tune with on tuner cats?
is it possible to hack into this program and create higher rpm tables and will it program them into the pcm or when I tune it does the rpm tables stay in the pcm and it just flashes new parameters into the rpm tables?

(in short, I want to get max performance and believe that I need to be able to tune in the rpm's that I run at to get this performance.)
