The low oil light is turned on by the oil level sensor on the side of the oil pan. It does not have anything to do with the computer.
Make sure the sensor is OK and the wires are connected. The only way to turn of the light is to A) fix the problem, or B) pull the bulb out. Not sure what you mean by "still be functional".

I have seen several with high miles have the sensor break. Its a long stick thing that goes in the side of the pan and the tip of it screws up.... Mine broke. Got a new one when I rebuilt the motor.
Check wires, that will do it too. If you want to turn it off all together...... (bad idea) cut the wires off the sensor. (I forget if they need to be connected or left undone. Quick trial/error will tell you that though.

The low oil sensor is just a switch. If you determine the sensor is bad, and you don't want to change it out (or if you can't change it out because you have a Canton oil pan and long tubes like I do
) just short the 2 wires together and the light will go away.
