This is a tunercat table, actually there are two, one is "vs RPM" the other "vs cool temp". Is this the same as "Power Enrichment"? I guess PE Mode is an LT1 edit table?

I'm getting knock retard at high rpm (around 6k) and it was hot outside (100* F) durring a dyno run. I dont beleive the car was running hot but coolant temp was probably a few degrees hotter than it would be on a 75*F day. AFAIK, pulling timing and/or adding fuel may remedy the KR. Should I add fuel in the "vs RPM" table or possibly the "vs cool temp" table. I also noticed there is a "spark correction vs MAP vs cool temp" table, maybe this one? Both tables with "cool temp" are gaduated in 12*C increaments so I dont think there is as much room for fine adjustments there.

If you are happy with your AFR throughout the range, I would just adjust a bit where the knock is occuring.

I also get a consistent knock in my car at 5700 RPM but my feeling is it may be mechanical in nature. I personally have not modified my AFR in this range, just took out some timing with no solution.
