Im going to be changing the cam in my friends '79 z, i was wondering if anyone has any good info or a good website on the easiest way to degree the cam.....anyone?

I'd try calling comp cams or emailing them. Perhaps they can point you in the right direction. I don't believe my "how to hot rod a small block chevy" tells you but I'll take a look. What cam are you choosing for what combination?
Is degreeing a cam necessary? I am putting in a hydraulic roller in about a week and have heard from some people you need to, and from others you dont. If it isnt necessary does it help produce more power if it is. I am also interested in how to dial it in and have no idea how.
Car Craft did a story on advancing and retarding cam timing by 4 degrees. They shifted the power band up and down the rpm range, but it wasn't a huge difference, a few hp. I've never degreed a cam. I just install them straight up on the zero marks. All my engines have run just fine. If you were an all out racer trying to squeeze out the last half tenth, might be necessary. Other than that...
