Help with making custom single/double din mount (non fbody)

My dodge ram has a fold out cup holder that I'd like to remove in favor of some A/V equiptment.

At first glance, it looks like it would fit 2 single din units fairly nicely, assuming that there is room behind it, again I'll have to remove it to check, but I'm pretty sure there is.

So, assuming that I remove the cupholder piece, and then make a replacement cover for it, how should I go about making a mount to be used for 2 single din, or a double din unit.

Would wood be a good idea? or plastic? or metal or what?
Any good sites for info on custom installs?

I've done them out of 1/8" aluminum and out of 1/2" or 3/4" MDF with fiberglass/kitty-hair to bond it all together.
