How low can i go???
The tire diameter (26.0") is not real big... about the same as the stock (base V8 models) 235/55-16 tires (26.2"). A 20" diameter wheel, with the correct offset, width and tire diameter will not be any more likely to rub than a stock 16" diameter wheel with the stock tires.
As you can see - whether anything will rub depends on the width of the wheels, and the offset (or backspace). Without that info, its not possible to answer the question.
And whether the headers will drag on the ground depends on the specific header - shorties or mids, using a Y-pipe similar to stock will not be any lower than the stock exhaust. Long tubes, on the other hand will be likely to rub with minor lowering. Again, without knowing the specifics of your setup, no one can answer the question.

Coilovers with ride height adjustable lower spring seats, air ride, or a combination of the two(that's what I have)!
