So I found a Gauge Plate to fit in the center console. After a little tweaking and minor modification, I have 2 Auto Meter 2 1/16th inch gauges mounted. Looks AWESOME.

How are you guys mounting the plate to the cave? I've heard of some using 3M emblem tape, epoxy, or even velcro..... I hate to glue it....in the event that I ever need to access the back side of those gauges..... I want something sturdy...but not necessarily permanent. My problem is that I don't have alot of 'meat' to work with..... So two questions....... 1) Where did you put the adhesive? and 2) What kind of adhesive did you use?
