Iron eagels will be a better choice over the factory castings, if going with 383and using iron eagles, go with their 215 or 230cc heads to offset the fact they're Dart and dont flow as advertised. The 383's stroke will offset for a larger runnered head and street driving on the low side of the rpm band, you dont want to give this motor asthma by going with heads any smaller, big cubes want big air to make big power

The best way to order them is bare and let a shop get your valves, springs, retainers, clips, etc...that way they can check out hte head and be sure everything is made per your application instead of mass produced heads with a flaw here or there. In reality given the fact your's is a street motor/fun motor it wont be as detrimental so you might save some green buying assembled over specing them out, but it's always nice to see exactly what your getting prior to installing since there can be casting flaws/assembly flaws with heads coming off an assembly line.
