2.73 to 3.42

will i notice the difference. and what will the rpms be at 50 mph in 3rd gear. and 80mph in OD.

yes, but you will need to swap out your carrier (yoke) when you go from 2 series to 3 series gears.

Yes, you'll notice the difference. www.f-body.org/gears/ will give you the old/new MPH and RPM's for each gear.
