I'm bidding on a set of black AFS ZR1s on ebay. This is the mixed set 17x9.5/17x11s with 38/36.5mm offsets.
Are the 17x11s going to stick out past the fenders on a Trans Am?
Anyone have pics of 17x11/36.5mm on a Firebird?
If I go with the 50mm offsets instead, will the tire rub on the inner fenderdwell?

You will most likely need to roll the fender lip with those wheels and get an adjustable panhard bar to center the rear. I believe if you do this they end up being either near even or sticking out just a tad bit.
With the 50mm offset wheels you are more likely to need to do some type of modification to the bump stop and/or pounding of the inner fender well area. With the 36mm offset wheels you are more likely to need to roll the fender lip.
It is impossible to say what will FOR SURE be needed. Pretty much need to install them and see what kind of issues you run in to

You might want to check the "Appearance" board. Back before they split up all the boards, there was an extended thread on the apprearance/fit of the 36.5mm offset 17x11's vs. the 50mm offset. Pictures were posted, and the general concensus seemed to be that the 50mm offset "looked better".
If you take a picture of a Firebird with the 50mm wheels on it, you can simply picture what is going to happen if you move the wheels 0.53" toward the outside of the car.
Also think about how the fronts will fit. I just saw a picture of a T/A with the wheels exactly as you are considering buying (I'm trying to remember which board I saw it on) and the fronts were very close to the edge of the fender as well. In that case you are looking at moving the wheels out about 0.70" compared to the 56mm wheels.
I have the 50/56 setup, so you could sort of prorate from there:
