What do you THINK I could run

What kind of 1/4 mile times could I expect with:

1998 Firebird V6 Automatic

SLP Cold Air Intake

Pacesetter Headers (pacesetter's website has them listed for the V6 Camaro.. will they fit on the 98 V6 Firebird?)

True Dual exhaust with 40 series flowmaster mufflers, 2.25" piping

No Cats (No emmisions tests in Florida )

3.42 gears

BM Shift Kit

Just a build up I'm imagining in my head

Not that much faster than my stock '01 Grand Am GT.

Just FYI: Running no cats is still illegal (national law), and you don't pick up much power from no cats anyway. I think you'd also have to run a module that makes the O2 sensors think you have them. There is also no reason to run a true dual. A single 3" would be more than enough flow and weigh less.
