First things first, coolant sensor is BROKEN OFF
(the one that goes to water pump) I was told this will keep engine in O/L (open loop?) This is possible cause for gas in oil? (I smell gas in oil girlfriend says on scale of 1 to 10 a 4) or no? The FPR to my knowledge is not faulty although the fuel pump did test bad with the pressure test I did on the fuel rail.
What are issues that I will see with it staying in open loop?
Next one, after car gets to operating tempatures (i believe is what you car savvy people call it) the oil pressure likes to drop at times (when at stop lights sitting in gear) to where it sits at around 1/4 and sometimes fluctuats and engine feeling like its missing ever so slightly...When i give it gas to take off it returns to normal...After lots of research (around 16 hours googling my *** off) I found that this can be the Oil sender (no idea where it is located), oil pump (thought it would be easy to change but after reading others posts sounds like a PITA???), Or the great one...bearings which means im screwed.

If the coolant temp sensor is broken off and the circuit is incomplete, you should have an SES light and a trouble code. If you don't, is a portion of the sensor still stuck in the harness connector? Enough of it to complete the circuit and make the PCM think its working?
If it was providing an artificially low coolant temp indication, the engine would not go into closed loop. That by itself isn't a huge problem, because is just disables "learning" with regard to A/F ratio. What would be a serious problem would be the sensor telling the PCM the engine was cold enough to require "cold start enrichment". That would make it run extremely rich, and probably rich enough to dilute the oil, thinning it out and reducing oil pressure (see where this is going?).

Well man it is totally broken off there is no connection there and the coolant light on the dash is always lit, when I start the car. So you think these two deals could be the same proble IE the Coolant sensor (being broken off and not connected) and the oil smelling like gas?? Or just the oil pressure itself??

The "coolant light on the dash" is for the coolant level sensor in the radiator. NOT for the coolant temp sensor. The water pump coolant temp sensor has nothing to do with anything on the dash. SES light will come on if the PCM sets a trouble code for the coolant temp sensor in the water pump - that's the only light that comes on.
Running rich may have diluted your oil. MAY be related. You need to fix the coolant temp sensor first.
