What happens when I unplug the O2s?

??? Ive been trying to get rid of my hesitation problem and wanted to try unplugging one of the O2 sensors to see if that maybe would help I heard it would keep it in open loop which is when my car runs good but when it warms up it = crap.. im going to bring it in soon to get the plugs wires filter and O2s changed if this works soon, any advice on unplugging the O2 sensor? and what exactly should I expect to go wrong if I have the O2 unplugged? anything? my car is completely stock

If you're talking about the pre-cat O2s, then it will run like dookie. If it's the post cat, OBD2, you'll just get a SES.
