I assume you're referring to the ZFX, and I think it has something to do with the polish being too "loaded" up on the surface after 3 coats. I think there comes a point where additional coats (more than 3) will basically not bond very well, become more tacky, harder to buff off, etc... Sal tested ZFX for a few years before it was released and he likely determined that the paint could accept up to 3 coats to cure per day. Sure you could add more, but it may not actually build on top of the previous coats. When the 3 coats are completely hardened then more polish will bond on top of that.... I've tried more than 3 on a test panel once and it did become smeary and tacky, like it wasn't really bonding the way it should. It certainly won't ever do any harm to the paint to try it yourself and see what you think. I'm sure Sal or maybe some of his distributors may have a more 'technical" explanation, but this is how I understand it.
You may get away with 5 coats in a day, but years of testing ZFX tells me that 3 coats, even heavy coats will work just fine, once you get over that many you start to "overload" the Zaino system, the polish can not grip to the other coats and it smears and becomes hard to take off. If you want more coats, apply the 3 coats in one day, wash the car and the next day apply 3 more coats, if that is what you want to do.
