I'm using an sbc thermo bought from Autozone and it works fine. temp never exceeds 180 on the hottest day.

You might not want to use it in the winter in Montreal, but summertime should be fine.

when having the 160 thermostat are the fans basically always on or what temp do they turn on at and does it add some power?

Changing the thermostat doesn't change the fan ON temps. You can read about the cooling system and thermostats here.
