Anyway I was just looking for some good advise on what size, and brand I should go with. What's too small, what's too big, my upgrades are listed below, I would appreciate your oppinion.

Hey, where in Mo are you at? I live in Olathe (over on the kansas side but still in KC area) and there is a great tranny builder over in Independence that could fix you up.
As far as stall goes some guys on here swear by the 3200 Vigilante by Precision Industries but they are way expensive, Great quality though and nothing but good things do I hear about them.
Still, it is too rich for my blood so I went with a TCI converter with about a 2400 to 2600 stall. This worked great for me since I have a stock LT1 motor with all the bolt ons.
If its a daily driver I would go a little more conservative on the stall but thats just me.

Well, I got a 2800 from all the recommendations here on the board and from other I've known. It's a great converter.

If I had it to do over again I would have gotten the 3200. The 2800 feels like stock until you mash the gas WOT, and the 3200 would feel even better. After my new engine combo I have it stalling around 3200 now and I like it much better.
