what octane gas does everyone run?
Minority me
Most of the time I run 93 when I can afford it.
Every few fillups (or when I do lots of highway miles at high speeds), I'll put in 87.
Surprising, even with 87, the car runs great, never pings. throttle response is ever so slightly less than when running the premium stuff.
When all you do is highway, and gramma shift in the city, there's really no need to run the higher grade stuff, other than for the quality of detergents.

Most of the time I run 92 octane, but for the colder winter months I run 89, since the cold weather not only means my engine doesn't need as much octane, but it also means I'm less likely to be doing full throttle at higher speeds due to the slick roads.
When I go to the dragstrip on a hot summer day, I use Sunoco 94.

I use 93. Different parts of the country offer different octane gasolines depending on your state. In Nebraska all I could find was 91 octane, whereas in NC/SC I can get 93 (and lots of stations here carry 100 at $4/gallon)
If your car does ping on 91 octane and thats all you have, try running a gallon of 100 for every 10 of 91...that should help some.

Its a shame that the extra 2 or 3 octan is so expensive

Yep, you're probably right there. It's a good thing thought that the LT1 isn't that hard on gas after all. Spent 10 000km on the road last summer, it's now in storage over the winter. Waiting for some headers, intake leak fix and some new brake pads.
