I'm hitting it in the right spot with the punch... it just isn't moving. I've been using that guide somewhat and another one(Meziere). I'll keep pounding away, hopefully it'll happen lol. Any other advice?

Not to be argumentative but it can be done that way as many other have successfully done it.
I will agree that a press is the preferred method and probably the most time effective assuming a press is close by.
If you decide to use the hammer and punch method just make sure that you are driving it from the impeller side towards the back of the pump housing.
It is also best to support the housing as much as possible without obstructing the shaft from moving backwards.
