Strange Temp Gauge Problem

Just lately, my temp gauge has been acting really strange. If the car is standing still or crusing at a constant speed the gauge will read normal but when accelerating the needle drops dramaticly almost to the 160 mark. As soon as I let off the gas or slow down it pops right back up to the normal temperature reading. The needle moves way too quick to be an actual temp change, it is almost instantanious. It seems directly affected with how much throttle is givin. What could be causing this?
