steam pocket in the block

i have had a major problem with a steam pocket building up in my block when i get a little low on water.......

most of the time when you add water to your radiator you have to fill it up and wait till it sucks it all in the block.......

well my car is different... if it gets the least bit low on water, it creates a steam pocket in the block and the temp. pegs out and it will not take any water because the pocket will not let any water in the block..... so the only way i can get rid of the pocket is let the motor cool all the way down and pull the top radiator hose off (where the thermostat is) and force water in it until it pushes the pocket back out the radiator........

this is a real pain in the a$$ because if i am off somewhere and my car loses a little water there is no way i can cool it down unless i have a pressured water hose.....

has anyone had this problem? if so please tell me how you fixed it.

by the way i took my thermostat out and this didn't fix it.

Do you ever use the bleed screws to purge air from the system?
