Stall torque ratio

Vigilante 2800 has a 2.53 STR. Yank SY-3500 has a 1.61 STR. Both were recommended for my bolt-on only car.

Does the 2.53 STR take too much top end torque away?
I am under the impression that the 1.61 STR will give me more torque in mid-high range, although the launch won't be so aggressive. Can anyone confirm this or have any input?
