should i use only 6qt in my 6qt oil pan??

should i use only 6qt in my 6qt oil pan??
during my stroker rebuild I change my oil pan in to a suposed 6qt milodon with stroker clerance, i keep the dipstick stock, but if i use only 6qt it apears "low" in the gage i need like 7.5 qt to be in the range. should i use only the 6 qt or be in the range?
