15mm is the correct wrench size.

All the round seals come off, but can be sticky.

Do what you gotta do, now that you have the heads off.
Is there any difference, besides larger bolts, in the later steam pipes?

Having dealt with getting these off recently, I had a thought.

There's no reason to take them off before removing the heads EXCEPT that GM made the whole thing one piece, meaning you would have to lift both heads at once. Not fun.

I think when you get the new one, I'd just cut it in half in the middle and throw a flange and male/female threaded coupling on it. Cost next to nothing, take 10 minutes (if that) and would make the whole thing a relative pleasure to deal with, going on or off. Put the steam fittings on each head, put the heads on and just join and tighten your flanged coupling.

The way it should have been made in the first place, though saving that $0.25 was huge to GM, I guess.
