Please help me with a direction to go

Hey guys, Name is Jeremy and my 94 Z28 was my first car and now have the money and time to really make her what I want. Lets just say I have a stock car for planning purposes. This is going to be a weekend/show car so I really dont care about drivability but want it to sound great and perform greater. Goal is mid-low 11 ET's. Money is not a factor as I will be building my dream car and know this will not be an overnight thing. I am not concerned about trans/rearend options at the moment as that will come in due time. Any suggestions as to what I should put under my hood? 355, 383, with or w/o blower? I have done some internal work in the past on a couple engines and am a mechanic by trade, so I want to do everything that I can myself. Anything I should really leave to the Pros? The engine was removed tonight and is currently on a stand waiting for the love as soon as I figure out what'll be best for her Also I am going to be cleaning up the engine bay so will be relocating Alternator. I was wanting to delete ABS, A/C and was thinking about putting in a manual steering rack. Any of this sound stupid for just a weekend car?

P.S. Live South of Baltimore and interested to meet some other local guys and curious about what will I need to do to "bypass" the emission requirements to build my car

If money is not a factor, fully forged motor with a turbo setup. Lopey cam, coated longtubes, slp loudmouth and cutouts for sound.
