I think the oil pressure before this, but I had an O2 sensor fail around that time. Don't really see how those would be related. I did do a cam and valvetrain swap over the winter, but the oil pressure didn't seem wierd like this until a few months later.

someone did mention the oil bypass spring being stuck. How can I check that? I know it is at the filter area but how could I check and see if it is stuck? (should have done this while changing my oil last weekend...idiot

I thought the oil bypass spring was in the oil pump? I put a different spring in my oil pump when I rebuilt the motor and I was under the impression that was the bypass spring.

Sorry to keep bringing this up but today when I started by car my oil pressure was a bit over 70psi! It moved down to around 45 or so after driving for 5 minutes or more, but still...70psi is crazy. How can I start checking things? How can I check the oil pressure sending unit? Any more ideas?

Before doing anything else, replace the sending unit and verify with a mechanical guage. The pressure relief valves in oil pumps don't seem to fail very much. But if yours is, no big deal. Just put in a new oil pump.
