No start condition.
I have fuel and spark. Voltage on battery seems fine too.
When I turn the key I just hear one click.
Last week it would click and then turn over and start half a second later. So there was a half second delary between turning the key and it starting.

Bad battery connection, bad +12V connection at the starter, poor ground connection, bad battery (could read 12V unloaded, doesn't mean battery is good), bad starter (solenoid). Is the Security light on?
