Its pretty straight forward. Get a Hayes manual and follow the instructions in there. I can have my intake off in about 25 minutes with standard hand tools. Of course that is with the car cooled off and the fact that I have done it about a dozen times.
Just do yourself a favor and take your time and make sure you do it right. Don't cut any corners either. Get a couple clean shop towels to put in the lifter valley to make sure the old gasket material don't fall down in there. If you are just replacing the intake gaskets, you might want to roll up some paper towels or old wash cloths to stick in the intake ports on the heads too.
Oh, and for the love of god don't use sandpaper to remove the old gasket material! A guy I know just did this very thing and I would have swore that he knew better....

It isn't hard at all but there a few things that matter on reassembly....unless you like doing it over again. One, the front and rear mounting surfaces MUST be completely clean, and, two, apply the RTV of your choice(minimum is grey high temp), install the manifold before the dealer sets and allow it to sit overnight before starting the engine. It works every time.....

sand paper and aluminum doesn't mix too well. if your extremely carefull with an extremely light touch it should be fine,

If you think you need a mild abrasive then consider using 3M Scotch Brite pads. They come in a least two different strengths at a supermarket near you. As others have mentioned, cover ports and oil returns, etc to keep bits of old gasket material out. These small bits have been known to pass through the oil pump pickup screen and the pump and then accumulate at the factory oil warmer/cooler (if you car came with one) and partially block it.
