How much WOT timing is ok to run?

How much WOT timing is ok to run?
Car is a 396 with 11:1 compression and is running on 91 octane. Right now it is set up to have 31 degrees at wot, but we don't want to blow it up. The knock sensor is not hooked up so we can't tell how much we can run.
