First, it is not worth the potential fine.
Secondly it will create turbulence in your exhaust flow which is not good.
Third, off road pipes are your friend.
Fourth, the stock cat actually flows pretty well. Until you need 1 3/4 inch headers there are far more effective modifications you can make.

Well, you take a knife, and...

You take it off and ram something through it, such as a pipe...

Cons:

Marginal hp gains
Your car is not street legal
It creates a resonance in the exhaust that doesn't sound very pretty, even if the rest is modified.

People that get rid of the cats and have headers, etc. usually just run an offroad pipe or a straight pipe through where the cat used to be so it doesn't sound crappy. If you gut the cat with the stock exhaust, your exhaust will be popping and doing other wierd stuff. Some people like it, but I don't.

Mine got clogged, It was cut off and had pipe welded back in place. Cat gone.. no popping, no issues, and everyone loves my exhaust. I hate it, its loud, loud inside the car, sounds too much like a damn truck (Flowmaster.) so Im getting quieter exhaust. I doubt I will be putting a cat back on the car though.

i have a cutout with a gutted cat and i like the sound. sounds mean as hell. all i did was unbolt the exhaust from the cat and beat the hell out of the inside with a screw driver started the car, blew it all out and rebolted the exhaust. only took about 15 minutes.
