How to check coolant with aftermarket overflow??

Guys I moved the battery to the rear and I have a Speed inc Overflow tank on my car. (It looks like the Jaz and Summit version). I have the top capped off and the bottom I have the valve open and a line running up tp the radiator cap.
Here is my newb question, how can I measure my coolant level now without the factory reservoir? And how can I add coolant now since I can not open this coolant reservoir to add coolant, I guess I can just open the 2 bleeder valves and add the coolant to the rad???

Just remove the radiator cap and fill with coolant directly
into the radiator. I have a JAZ recirculating jug and
that is what I do.

I don't think you want to "cap off" the top valve as the jug needs to be able to release air as coolant is forced into the bottom of the jug. Just run a hose from the top connection down towards the ground in case the jug overfills. As long as there is some coolant in the jug when the engine is cold you have enough coolant in the system. If you can't measure the coolant in the jug then look into the radiator, the coolant level should be close to the top of the cap.
