Okay so yes i did a search and i also looked at Shoebox's tech page. I know this is some pretty basic stuff here and its going to be a tough job but can anyone tell me how to remove the heads from my LT1? And do i have to drop the engine out to do this?

no you don't have to take the engine out of the bay.
it's pretty straight forward...
exhaust manifolds/headers
intake
coil/icm
AIR pump and bracket
take bolts out of power steering pump
take two bolts out from the acc. bracket that bolt to the pass. head. I believe they are 9/16 and an offset box end wrench is the best way to loosen them
pushrods
if you have stock rockers you may be able to push them aside to get the pushrods out
ALL head bolts. There are 17 of them per side.
the heads may be tough to get off. use a mallet to bang on them. i would not recommend using a prybar.
make sure you use a QUALITY 6 point socket for the head bolts. if you don't you may have to deal with a stripped head bolt.
use an 18" 1/2 drive breaker bar to loosen the head bolts
you may have some difficulty with the bolts next to the heater box. just use the best combination of socket/extention to put the least amount of stress on the heater box. you'll see what i'm typing about once you get there
steam pipe. this may be a platnum plated PITA to get off. If you end up stripping the banjo bolts then just cut it in half or take both heads out at the same time and deal with it once you have better access to the back side of the heads. I've had good luck using vice grips and a hammer, but the banjo bolts will need to be replaced.

I find that the best reference is a factory service manual. I would not
attempt any type of major repair without one. The other reference info
provided is excellent, expecially the shbox.com site, but do yourself a
favor and pick up a service manual.
