gradually running worse - why?

mods in my sig
I swapped in the tb/elbow and MAF during the rearend and brake install. Car drove in running great.
It drove the first day out just as good - all rpms and idle. Next day ran well - I beat it like always and it was fun! Then I realized at full WOT it bogged back to 5000 rpm. Also on that ride started to stumble during light load throttle while cruising. Inconsistant degrees of crappyness.
Next drive it was to the shop to read scanner about the bog.
That checked out to be the throttle position reading passing 100% open -fixed that and TPS volts. .67v at 0% - 4.67v at 100%.
Todays ride out of the shop it just has a hesitation and even popped once going down the road. It does different things at a full throttle pull: will clear up and go, wll hold back rpm's and surge, will misfire and stumble.
I just swapped th stock MAF and cold it sounded perfect again - sitting in park. Idled great - revved high, held 3000 smooth as can be. Go for a ride and it runs like *** still.
Could the Holley tb get worse - it was running fine for a few days after the swap?
Did I lose the opti?
Plugs?

Is this a basic tune up issue just coincidentally after we worked on it?

I have a complete deltq/DIS-4 coming. You have anything else basic I should test?

my car did something similar to yours and what I found was that the MAF was dirty, if you clean it and still have same results, I would probably look at fuel filter next
