Engine over heating? rad or Catalytic convertor problem?

Its been a couple of months that my rad light comes on after 30 mins of driving.. yesterday the engine temp was at it highest.. 125.. so i opend the rad and filled it up with water.. i had to go to north.. so i was driving on highway, and every half and hour i had to stop and replace the rad water.. i did this for at leats 6 times. on the way back some guy who claimed he had 10 LT1 cars told me that its my cat.. in a way it made sense.. cuz my headers would become soo hot that the left one was red.. he said that ur cats are blocked and it doesnt let the exhaust air to get out easily. btw i have had my engine light on for about a year.. one of the code or the evap system,, and the other one is something with the purge control stystem.
what do u guys think is the problem? its really bothering me. if its the cat,then why did i have my rad light on for so long? and why is it that after half an hour of driving, the water in the rad seems to be diminishing. another thing is that after he told me about my cat i started driving on low gears so my rpm would be high.. it was better , cuz my engine temp stayed lower.. and whenever tthe temp went up, i would rev the engine to like 4000 rpm and the temp would drop. but i still had to replace the rad water after it was really hot.(not as frequent as before though). again this makes sense, cuz i guess it made the flow better by increasing the exhaust pressue.
anyways can some one tell me their opinion?

Don't worry about your catalytic converters now, you need to find out where the coolant is going first.

i filled it up everytime i filled up everytime i replaced the rad water

A plugged cat could make your headers glow but it won't make your water level change. Your best approach at this point is to do a leak down test and see where your coolant is leaking. You could also look at the plugs when you pull them. If one is burning water it will look a hell of a lot cleaner. You can also pressurize your coolant system and if it will show up that way as well.

If you've been burning water as I suspect, not only is your cat bad but your O2's are probably shot as well.

Is it not possible that the cat is causing the engine to overheat and simply causing the water to over flow? I know if I ever had a overheating issue it would overflow. Just a thought.

i took it to my machanic,, and we figured out it was the waterpump that was leaking.. i changed it, and now its good. but i still wanna get rid of my cats.. i wanted to either gut them or take em out. but my mechanic said he cant touch em cuz there is 2 of them, and he said that i need to get the Y-pipe without the cats. what are my options? im not really worried about emmissions, cuz i got hookups. if i removed my cats would i get engine light or stuff like that? right now i havce the borla cat back.. and the rest of myt exhaust is stock.

I wish I had my catalytic converter back. Mine is gutted. After about 7 years of having the drone inside my car (daily driver), I'm geting a little sick of it. It does sound cool though.

how much HP would get by gutting them? and how much louder would it be? i already have the borla catback, with no plate.
