Question cooling

anyone help... I have a 97 30th annv. conv. z28
it has 129,000, coolant has been changed.... the other day after driving it for an hour.... the low coolant light lights up?????
check the coolant and everything is up to level no leaks.. the light only comes after driving it for more than an hour.

My question is... has anyone had this problem?? do you guys think it can be the coolant sensor????????//

Just replace the sensor, its about 2 inches below rad cap.
