Car over heats but if you rev it it cools down fast!

I'm new to this and the reason I signed up was to learn from you guys. I notice there are a lot of knowledged people here. Ever since I got my head gasket replaced a week later which was about 3 months ago. First time I started the car at my dealership that I worked at the fans went on FULL speed and the motor light went on. My friend that works there said he had to plug something in. And just to let you know I had my car for 3 years and the fans NEVER went on in the timeline that I owned my car. Well a week later that three months ago and now if you drive it hits 185-195 F normal then 5 min later it goes to the middle which is 200F I was what the F*** that never happen. Since it was warm out that time if you stopped bam you can see the gauge move REAL FAST!! it went next to RED and on the red then for some reason I revved it to 1800RPMS then to about 2200RPMS and the Needle went down so fast!! back to 185F. Please help me it been three months and people don't know why. If I drive up my drive way and in the grage and put it in park it happens fast , or in overdrive. I thinking from the gasketsealer I poured in there 2 years ago made the water pump clogged. I put a radiator cap and that did'nt help it. IT's either,

1.) Water pump bearing seized or gunked up.
2.) thermostats.
3.) Maybe air in the system but people bleed it.
4.)sensors because the fans neevr come on
5.)PCM
Car has 156,000 miles, syn oil, changed the coolant every 3 months, I always use Green coolant from Prestone. HELP ME people are saying different things my friend said there might be a leak and air is going in it. The coolant level is always clean and good it never gets low. I'm tired of driving my car for months with the gauge going up . Its not that bad now bec in CT its cold out so it only hit from 200F to alittle bit near the red.I do short trips with the car bec of this but its embrassing when my girl is in the car with me. Just to let you know when the car stops and you open the hood sometimes you can hear things like gurgling which im pretty sure never happened before I owned it. Im tired of reving my car at a stop light or stop sign when there is a cop behind me thinking I wanna race.

That gurgling sound your hearing is the water boiling or recirculating from the radiator into the overflow tank. Have you checked the sensor on the radiator?

I don't know alot about the sensors on the radiator. How many are there? Where are they located. Thanks for responding means alot.

When the engine is cold, check the coolant level in the radiator. See if it is full.

If you haven't replaced the thermostat i would do that since its a cheap and easy thing to do. Make sure you bleed the air out when your done. I had a similar problem and it fixed it so theres a good chance it fixes your problem.
