Plus the MACs have a el cheapo spray paint coating which is way lame.

No way. My brother paid $350 or so from LS1 Speed for his MAC headers. I bought my SLPs from Tbyrne on GP for $379. For $29 more I got stainless. Granted, I had to shop around, but it was well worth it.

I got my MAC's, jet-hot coated inside and out, with the Y-pipe shipped to my door for $540.

I'd recommend the JBA's - they fit well and the plug/wire access was pretty good, and they bolted right up to the stock y-pipe without issue. I have a set of ceramic coated ones available for sale (I went the LT route). PM me if you're interested.

However, there are ways around that.
I live in PA. I don't have to worry AS much about emissions anymore, due to the fact that PA decided to stick with the ODB2 testing for emissions. Sure they still do a visual inspection, but I am fairly tight with my shop. As long as the PCM doesn't throw a code, everything is cool and you pass emissions.
Therefore, here is what I am going to do. I am going to get the Jet hot 94-95 style headers for my vehicle even though it is a 97. I'll make sure to get the AIR & EGR fittings attached. This setup even comes with a y-pipe. Then, it's just a matter of connecting an S pipe (availible from most retailers, or exhaust shops) to the stock exhaust or catback exhaust.
Also in PA (I found this out from PCMFORLESS) you can have one exhaust item turned "off" or disabled. They told me that if I get long tubes - I can just delete the rear O2 sensors and still pass the ODB2 check. Neat, huh?
I will probably connect dual cats again to the end of the headers - or just one at the end of the y-pipe - but I don't know yet.
Cost =
$540 - Jet-hot LT w/ y-pipe
$30 - S pipe
