355 Vs. 383
Depending on what crank you use on a 3.750 stroke determines how much the pan hits.. Stock pans can be used in most all cases with some modifications.. Some pans will fit without modifications, depending on what parts you use.. not a big deal at all.
Basicaly the rule of thumb is if you are buying another crank, might as well upgrade to a 383.. If you re-use the stock crank, and are on a budget, go witht he 355.

What gearing do you want to use with this motor? The stroker will obviously work better with a taller gear, probably best all around with 3.73's or 3.42's even 3.23's would work decent should you go conservative with the cam. If you're wanting to go with 4.10's or something steeper, the cost for that would be about the same as a stroker, something to keep in mind. Should you stay with the 355 and go with a pretty big cam, it'd probably be best to swap to some 4.10s.
Also, If you're gonna build the stroker, I would run longer rods than the stock length, preferably 6.2" but 6 would be better than the 5.7's to help keep cylinder wear down and make the motor a little more durable at high rpms.
