160 T-stat not 160?
Thermostat timing.
My 170 degree stat starts to open at 170 degrees and is fully open at 180 degrees when I bought and checked it. The old 180 degree stat started to open at 180, but wasn't fully open until 195 degrees. I would say that your 160 degree stat only starts to open at 160, and most likely isn't completely open until about 170 degrees. So, it seems that they might all be rated at just the beginning of the opening timing.
Keep in mind that the 160 rating is only when it starts to open. Air flow, radiator age (clogging), timing, fans etc. all decide on how hot your car gets as well. Your car isn't going to sit at 160 all day long juse because you throw a 160 t-stat in there...especially if you are sitting in traffic or beating the car hard.
It begins to open at 160°. Your old 180° thermostat did not keep your engine at 180°, either (more like 190°-195°), in the same conditions.
