98-99 (not sure about 2000) have more aggressive CAMs
(00?) 01-02 have less aggressive cam, but no EGR system (due to cam overlap)
You had a good chance of getting an LS6 heads and/or engine block, i believe it was towards the later years

01's seem to have a oil consumption issue...not sure if they tried new rings for that year or something??? I had mine replaced under manufacturers warranty due to excessive consumption.

NO F-body came with LS6 heads period!
Some 2001's and about 1 in 4 2002 F-bodies came with the LS6 block.
1998-2000 had a larger cam:198 intake / 209 exhaust duration @ .050" with both intake / exhaust lift being .498" on a 119.5 LSA. The 2001-2002 cam specs are 197 intake / 208 exhaust duration @ .050" with a .467 " intake / .479" exhaust lift on a 116 LSA.
2001-2002's seem to have a more reliable oil pump, and have stronger rod bolts.
In 4/01 GM changed the piston design (tightened piston to bore clearance) and added a polymer coating to the skirt to prevent scuffing. They also used tighter piston rings to prevent ring flutter for better oil control.
Later 2000 models thru 2002 came with 241 cylinder heads which appear to have smoother cast ports than the previous 853's.
2000-2002 had better flowing cast iron exhaust manifolds and higher flowing catalytic converters. The 1998-1999 cars used double wall stainless-steel manifolds.
1999 and 2000's had smaller fuel injectors than 1998's and 2001-2002's.
And of course all 2001-2002's came with the LS6 intake manifold.

I have an 01 and my dad B*#ches at me like it's my fault the car eats oil. Ive always wondered if it were just my car that did it. Seemed kind of weird. Did the rings make it better or no?
