going to check out a 2000 SS

what should i be looking for under the hood?

i know to do all the basic things like checking the fluids and such..

anything particular i should be looking for on these ls1's?

If you want a stock car there are several things to look for. If you don't care then just take it for a drive. One thing I would suggest is to look under and around the rear wheel wells for rubber. If there is a lot of rubber it has prob been to the track. Nothing wrong with going to the track, but if you are looking for a car with minimal wear you would want to find one that looks unmodified and doesn't have any signs of drag racing. You can look for simple mods under the hood TB bypass, LS6 intake, if the car has an EGR, pulley, lid and tell that the car has some mods.
