Never done a re-ring on an LSx engine but if I did I would call an engine builder like our sponser Victory Racing Engines and get a recommendation from them.
I would at the very least hand hone them if the crosshatch was gone.

Curious, why do you need to re ring the pistons? If you hone it you might need oversized pistons.

A sure sign of bad valve seals is when you park the car overnight, and when you start it up the next day it smokes for a minute while it burns off the oil. Maybe a compression test is in line.
I wouldnt be tearing this engine down because you think you know a solution. Too much time and money to not know for sure.
