What programmer are you using? I can set mine in one degree increments and programmed them to come on at 184/off 175 for low, and on 194/off 185 for high. Mine run quite a lot here in Florida.

That's what I'm using - try those settings and see how it works for you - you can change them anytime to make them come on at higher temps. Write down your currrent settings in the back of the manual so you know what your starting point was. BTW, you won't see much difference on the stock temp gauge.

why do you use lower temp thermostat in your cars. I was alway told to run a engine hot and it will produce more power. Will the new cars advance the timing if the engine runs cooler. Teach me

Fossil fueled engine temps have always been a compromise. You need heat in the combustion chamber to promote a good burn for good power and effiency but you want cold air into the engine for the same reasons.
A cooler stat and lower fan settings reduce underhood temps and keep the air charge cooler without hurting the temps in the combustion shamber too much.
For what it's worth I don't believe in a cooler stat for stock LS1s. I don't think that there's any performance gain. But when I went heads/cam I too went to a 160° stat and the above mentioned fan settings.
