TH350 to manual help!

Hi everyone!
This'll be my first and maybe only post. A few years ago I bought a '79 Z28 from my dad with the hopes of beefing it up and having a weekend rompin' machine. After a year of custom building the engine and finally getting it where I wanted it, I blew the th350 tranny backing up too fast. Come to find out that particular tranny had already been rebuilt twice. I figured it would be a good idea to just go ahead and replace it all together instead of rebuilding it a third time. I've always wanted a muscle car with a manual so I'm setting out to pick your brains on what to get. In my case I would like to find a beater in one of the many local junk yards and tear out everything I'll need, instead of buying it all (for what will assuredly be many times the price) piece for piece. If anyone here has info, I'd like to know;

1. What car/truck to look for
2. What tranny will said car/truck have in it
3. Will the tranny work with my carburated 350
