Going to have TH350 built RIGHT, any advice on parts?

I am having Dave Rockwell of Rock-On Transmissions in Texas build my TH350. He said it will be around $700, but he uses alot of in house custom parts. I drive this about 5,000 miles a year, maybe less. The questions I have are these:

1- Which valve body would be best for me.

A full manual looks nice, but I had one in a Mustang and its kind of a pain. On the Mustang if I threw it in 1st at say 30, it would idle and just jump to the stall speed when I punched it. Would this be the same on a TH350 with a full manual valve body?

A trans-brake looks like alot of fun, but not sure that it is nessacry, I will probably only be pulling off high 11's, with somewhat frequent bracket racing. Is there a way to do a brake with a non-manual valve body?

How much are the full manual valve bodys versus the brakes?

2- Dave seems like he knows these things inside and out, but just incase somewhat on the board knows something important, I will go ahead and ask if there are any things to make 100% sure he does so that this thing will last.

3- Is 700 plus the cost of the valve body outragous for a TH350 racing build? I believe all his work comes with a 3 year warrenty.

Thanks,
James
