Clutch questions

I am shopping for a LS-1 z28 as of now and have found a good deal.Car is a 1999 Z-28, 52k miles. The owner says that the clutch shifts kind of hard after the new clutch install. He says that the clutch installed was from his local dealer and it is an OE quality clutch but just not GM brand name.
He says that the clutch has a kind of "hesitation" just before it goes into gear. The mechnics shop where he lives say that it is perfectly fine, so I was going to ask you guys how a stock set-up should feel?

He said that he has also bought a low mileage stock clutch out of a C5 that he is giving away with the car.
I work in a mechnics shop with my grandfather and we have a lift and plenty of tools.
So I was wondering how hard it would be to change the clutch on a 99 z-28 compared to the average car.
