Put your car in it's 1:1 ratio gear (3rd in autos, 4th in manuals)....drive at 70 mph. Your RPM will tell you your axle ratio.

3250 seems a little high?

Well, to be honest, I put back the 2.73's this summer because I've been doing a lot of highway driving (and not much racing
) but I really haven't been getting very good mileage anyways, and can't honestly say that my fuel consumption (on average, with a ~50/50 mix of city/hwy) has changed very much one way or another. Sure, 100% straight highway cruising, I can get a little over ~300 miles to a tank, but even with 4.10's, I could get around ~240 or so ... still not bad

All you have to do is enter the vehicle and change the gear ratio to 4.10, if you have changed the tire size then enter it, if they are factory then it will auto populate then you just need to press calculate.
When the results come up on the screen to the right, then you go to the 4th gear column scroll down untill you see 80 then look over and see what RPM the math says the motor should be rotating at. BTW, with stock tires and 4.10's you should be closer to 3000 RPM's, to get higher then 3200 you need tires smaller then 24' tall... BTW, is your speedo reading correctly?

This does not account for an unlocked converter, but the converter should be locked at that speed...
