I recently made some runs on the dyno and my results are below.
NA:

100 Hit:

So the question is, what rpm should I be shifting at running NA or on the juice?
The rev limiter is set at 6500rpm currently but looking at the NA graph, I am not making any more power past 59XXrpm. Also, on the juice, my power peaks at 52XXrpm and then trails down a bit.
M6 car btw with 3.42's in the rear.

Your torque curve looks nice and flat which is ideal. To me if your torque starts to fall off quickly you want to shift. Based on my knowledge of the formula for HP (evidenced in your Juice graph) the HP can continue to climb after peak torque has been reached. Your case is actually a pretty good example when comparing the NA to Juice. There are so many factors to consider such as when shifting where are you going to land on the tq curve in the next gear - this consideration is somewhat mute on the NA but a quite opposite on the juice.
I'm curious to hear some more experienced replys as I'm sure there are many other considerations.

The graphs don't extend far enough to really give a good suggestion. Basically you want to match the delivered hp at the top of one gear to the bottom of the next to maximize power throughout the run.
If I had to fathom a guess from your graphs, I would say 6500-6700rpm would be about ideal.
