Tuning question for my build

Currently running a 355 LT1 with RealQuick's hot parts. This build has been going on for almost 2 years I feel like, and it's almost time to drive! Last part: tuning.

I plan on running open loop, 2 bar, stock PCM setup utilizing the 2 bar tune found here. Unfortunately, my 2 bar map decided to break. On Freescan, it reads my MAP BAR as .3. If I put my stock map sensor on, it reads 0.99 (stock is 1 bar), so I assume it is shot. I ordered another, but while I wait for it to come in, I wanted to see if I could get this thing to atleast move.

I edited a stock tune, made the injectors 72lbs, upped the cylinder volume, and decreased fuel some throughout the map. (BTW, open loop, SD tune, 222/230 .550~ cam). The car will start if I give it gas, and will stay on as long as I am on the gas. A/F was 11.5~ when I apply slight throttle. The car stalls if I let off the gas completely.

I am just curious on why it stalls. Is there any experienced tuner out there that has an idea? My assumption is once the car is restricted to almost no air intake, the car floods itself and stalls. It happens to fast my wideband can't detect it.
