I'm in the process of changing ISP's and I'm having trouble with my mail. I can receive, but not send anything.
Anyways, the coolant temp and rpm tables are percentage based. So if you want to remove fuel then you need to lower the percentage of fuel that it is adding.
Rule of thumb is for every 10 points you remove from the rpm table, you should lean the car out by 1 a/f point. So if you want to lean it out from 11:1 to 13:1 then you need to remove approximately 20 points.
Or you can try using that spreadsheet that turbo_Z linked you to.

the coolant temp table has a multiplier in it as just like the rpm table. what you want to do with the coolant is figure out what temp your car runs in most of the time and use the same %change for that range so your AFR stays constant with engine temp fluctuations.

Right Right ok so if the number is 3.0 and i am 11.0 afr now 2.0 would be 12.0afr & 1.0 would be 13.0 afr

now do i adjust the temp table too
Dan i would be lost

No. For every 10 point change you are going to effect your a/f ratio by approximately 1.
If you are at 11:1 and your pe vs rpm is 3.0 and you want to change to a 12:1 a/f ratio then you need to subtract 10. So you'd have -7.

Here's your answer:
